Crunchy green beans sauteed with garlic, shallots and crispy bacon.

Sauteed green beans are a fast and delicious side dish to add to any meal. This is my go-to way to prepare green beans whether we're having steak, chicken, fish etc. I always prepare a side of green beans this way for Thanksgiving and it's such a big hit since it's got crispy bacon on top!
Ingredients:
2 lbs fresh whole green beans
5 cloves garlic, thinly sliced
1 shallot, thinly sliced
4 strips of bacon
1 tbsp salt
Freshly ground black pepper
Directions:
In a pot, bring water to a boil and add salt and green beans.
Blanch green beans for 5 mins on high heat.
Strain water then set green beans aside.
Preheat a skillet to medium heat and dice bacon. Once the pan is heated, add the bacon.
Fry bacon until crispy then remove from skillet onto a paper towel lined plate.
Maintain the heat at medium then add the sliced shallot and garlic. Cook for 2 - 3 mins until softened.
Add the green beans to the pan toss in the shallot, garlic and bacon fat for 5 mins.
Season with a pinch of salt and freshly ground black pepper. Do not add too much salt as there is plenty in the bacon and bacon fat.
Toss in the bacon until fully incorporated and remove from heat.
Add to a serving dish and enjoy.
